My First Take on Savory Oats

I’ve been intrigued for some time by the idea of savory oats, but a woman set in her ways I had yet to give it a whirl.  Until yesterday that is, when the need to use up a quite unusual combination of ingredients threatening to rot away in my fridge prompted me to give it  a try.  I must say, I’m pleased to have a whole new category of oats in my breakfast arsenal.  The options are endless but the fried egg is definitely a must– break the yolk and blend it with your savory oats for a fabulous high protein start to your day

Savory Oats with Tomato, Spinach and Cottage Cheese

A Messy Kitchen Original

Ingredients:

  • 1/2 cup oats
  • 1/4 cup canned diced tomatoes
  • 1/3 cup milk of choice
  • Handful of spinach
  • 1/4 cup cottage cheese
  • 1 large egg
  • Salt and pepper to taste

Directions:

Combine oats, tomatoes and milk of choice in a microwave safe bowl.  Mix in spinach and salt and pepper, to taste.  Microwave for 2 minutes.  Meanwhile, fry your egg leaving the yolk soft.  Once the oats are cooked, mix in the cottage cheese and top with the egg.  Mix in the yolk for best flavor.
