Salad on the Grill! Romaine Hearts with Homemade Blue Cheese Dressing

Yesenia made these grilled romaine hearts for our Boo(z)k(e) Club last week and I liked them so much I hounded her for the recipe.  Although as you will see, I’m posting this more as a summer BBQ inspiration than a recipe to follow to the T.   You can use gorgonzola or blue cheese and you can use fat free sour cream and mayo to lighten up your dressing.

From Yesenia: 

Romaine Hearts (1 half heart per person)- Cut in half and drizzled lightly with olive oil; Place romaine cut side down on low heat grill- Grill til just tender (still want some crunch) about 5 minutes, then turn over and grill 2 more minutes. 

Dressing (Depending on how much you want, I just eyeball):

  • Large dollop of Sour Cream
  • Small dollop of Mayo
  • Gorgonzola (or blue cheese) crumbles (as much as you want)
  • Salt & Pepper to taste
  • Splash of Lowfat Milk to make the dressing thinner
