Snow Days & Fig Muffins

A snowy pink palace

Yesterday afternoon, we were instructed by OPM to depart 2 hours early [and report straight to the bar].  At 6:30, Nora and I returned home buzzed enough to not mind that could have been mistaken for Frosty, made our respective suppers and begun a marathon of West Wing and red wine (a typical night in the Pink Palace).  I woke up at 5:30 and checked OPM.gov, only to find a 2 hour delay, which unfortunately doesn’t generally apply to people who could throw a snowball and hit the Capitol.  So I dug my car our of the snow using a dust pan and made my way to the gym, managing to only get stuck three times and miraculously, make it to my class.  Finish my workout just in time to get the ‘our office will be closed e-mail’.  Necessary or not, I won’t argue with a snow day.”]

French toast and a basil, goat cheese, and roasted red pepper omelette= the perfect start to a snow day!

By 3:00pm, I’ve already gone to the gym twice, scrubbed the entire kitchen to the extent that it’s slightly cleaner than a frat house and thoroughly reaffirmed the notion that I would be miserable as a stay at home mom.  My dinner party for the evening has been postponed, so in need of a new means of entertaining myself I walked to the store to get the ingredients for these Honey & Goat Cheese Stuffed Fig Muffins.  I made these for the first time for my mom’s birthday, and loved them– they’ve one of the few recipes I follow (almost) exactly:

Lots of ingredients!

...and lots of work.

The finished product, totally worth it!
